Rhizome Feasts Steak Salad

S t e a k S a l a d N i g h t . . .

One of my easiest dinners on repeat, gets you through the week. I eat red meat about 1-2 times a week and I notice a boost in energy when I’m minimal with how often I eat it.

M a k e i t . . .

•Hearty greens, marinated red onions, avocado, small cucumbers, Gorgonzola

•Mixed with whole fresh herbs; mint and tarragon.

•Strip loin seared on the cast iron.

•Well rested and thinly sliced, drizzled with really good virgin olive oil, grated garlic and flakey sea salt.

•Splashed generously with a dressing of freshly squeezed blood orange juice, tsp of Dijon, tsp of maple syrup and a little red wine vinegar, black pepper and more olive oil and chopped herbs.

•My favorite part is the steak at the bottom of the salad bowl that gets extra love from the citrus vinaigrette.
