Winter Salad with Radicchio, Citrus & Pomegranate

Make the switch to pink leafy salads in the winter. Locally grown chicories are a feast for the eyes & body and the grow well under cold weather conditions.
It lasts for ages in the fridge.
Radicchio is a powerhouse of vitamin K
Barely bitter and holds up beautifully to a naturally sweet vinaigrette.
Plays well with other winter fare like citrus, cured or smoked meats, salty cheese, pears, fatty nuts or olives. YUM 🐷

M a k e i t..

•one head of Radicchio/Chicory of choice.
•1-2 blood oranges or any orange/grapefruit you want (peeled & sliced/segmented).
•1/3 of a pomegranate seeds plucked.
•1/4 cup walnuts.
•1-2 cups spice roasted squash.
•Handful of nice strong cheese, I used a ripe Gorgonzola.

D r e s s i n g :

•Grab a jar, u will have extra..
•1 tbsp fig paste (I make by hydrating dried figs and buzzing them in a small food processor) stores for months in fridge.
•2 tbsp reduced balsamic vinegar* or regular balsamic and a little honey.
•1 small minced shallot or 1/4 of a red onion.
•2 tbsp red wine vin or vinegar of choice.
•Pinch kosher salt and black pepper.
•Chopped herb like rosemary or tarragon.
•4 tbsp olive oil.
•1 tsp Dijon mustard.
Shake, whisk or blend. Keeps nice for days in fridge.
