Mid-winter in the PNW + covid pandemic still swirling around with a vengeance, you really can’t go wrong with some of this liquid gold.
Inspired by seeing @earthyandy make her delicious “Jamu Wellness shots”, I decided to expand her recipe and stock the fridge with a big jug of our own. Been guzzling it down ever since + feeling a zingy burst of energy after and no crash.
This can be juiced or blended. I choose to blend because fiber is like a scrubby brush for your insides.
Makes about 1.5 quarts of thick juice.

Thick Sunny D! Some for now and some for later.

M a k e i t . . .

Combine all the ingredients in a powerful blender or juicer (but you would miss the fiber) and blend in stages adding the liquid first. Total blending time is about 90 seconds depending on your machine.

1 lemon (I use whole scrubbed
1-2 orange (whole scrubbed)
1/4 pineapple (peeled)
3 nubbins of fresh turmeric (I peel)
2 nubbins of ginger (I peel)
Coconut water
2 cup water or ice
2 Tbsp honey
1 tsp black pepper
2 tbsp olive oil*
(a little fat helps us absorb the vitamins, you don’t taste it).
